Thai Carrot Soup

 4 grams of Fiber/cup

I'm on a journey to heal a fissure and was tasked to eat 30 grams of Fiber each day. I quickly realized that my diet would be heavy on grains and look vegan. 

Tonight's dinner will be Thai Carrot Soup and Edamame Pasta - total of 12 grams of Fiber.

These aren't exact measurements. I made carrot-sweet potato soup last week and doctored it to make it Thai. It worked out AMAZING!

Soup:

Drizzle olive oil in pot

1 onion - cut up

5 carrots - pealed and cut

3 sweet potatoes - pealed and cut

Garlic .. however much you like

Salt and pepper

Cover with water and cook until veggies are soft

** I recommend pouring off water to blend and add water back in to create consistency of your liking*

Blend with immersion blender

1/3 C or a heaping tablespoon peanut butter

1/4 C Sriracha

4T Brown sugar 

2 T Basil!

Half can light coconut milk

Bring to a boil again!

Enjoy!


For the Edamame pasta....

Also using from our leftovers: Follow the instructions on the box and made a basic peanut sauce on it but felt it was too bland. 

Going to cut up some cabbage, carrots and scallions and add more peanut sauce. 

Hopefully it will be tasty!
